Thai-inspired Burrito Bowl 

This is a simple and tasty roasted pork dish that uses minimal ingredients but packs a lot of flavor. It's perfect for an easy weeknight dinner or as part of a larger feast. The combination of sweet and salty flavors from the honey, brown sugar, soy sauce, garlic and rosemary makes it irresistible!

 

Ingredients:

- 4 cloves garlic, minced

- 2 tablespoons olive oil

- 1 tablespoon honey

- 2 tablespoons brown sugar

- 1 tablespoon soy sauce

- 2 teaspoons dried rosemary leaves (or 1 teaspoon fresh)

- Salt and pepper to taste

- 2 pounds boneless pork shoulder/butt, cut into cubes about 1 inch in size

 

Preparation:

1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).

2. In a small bowl, combine the garlic, olive oil, honey, brown sugar, soy sauce and rosemary leaves. Mix together until all ingredients are thoroughly combined.

3. Season the pork cubes with salt and pepper, then add them to the mixture in the bowl and toss until they are evenly coated.

4. Pour out onto a baking sheet lined with parchment paper or aluminum foil and spread into an even layer.

5. Place in preheated oven for 25-35 minutes, stirring halfway through cooking time so that each piece of pork is evenly cooked on all sides.

 

Serving Instructions:

1. Serve the pork cubes over a bed of steamed rice or quinoa, with a side of sautéed vegetables and any other desired toppings (such as diced avocado, chopped tomatoes, shredded cheese).

2. For an easy Thai-inspired burrito bowl, fill a warmed tortilla shell with the steamed rice or quinoa, roasted pork cubes, sautéed vegetables and desired toppings.
