Chimichurri steak sandwich
Chimichurri steak sandwiches are a delicious and flavorful Argentinian-style sandwich. Made with juicy marinated steak, chimichurri sauce, red onions, and lettuce on a toasted sub roll, it is sure to be a hit at any gathering or family meal. This easy-to-make sandwich packs plenty of flavor into every bite!
Ingredients
• 2 pounds skirt steak
• Salt & Pepper to taste
• 1/2 cup olive oil
• 1/4 cup red wine vinegar
• 2 cloves garlic minced
• 1 teaspoon dried oregano leaves crushed
• 1/2 teaspoon ground cumin seed
• Juice of half a lemon
• 1/4 cup fresh parsley chopped
• 2 tablespoons fresh cilantro chopped
• 4 sub rolls toasted
• 1 red onion thinly sliced
• Lettuce leaves optional
Preparation
1. Place the skirt steak in a shallow dish and season with salt and pepper. In a small bowl, whisk together the olive oil, red wine vinegar, garlic, oregano, cumin seed, lemon juice, parsley and cilantro until combined. Pour this mixture over the steak and cover with plastic wrap. Let marinate for at least 30 minutes or up to overnight in the refrigerator.
2. Preheat your grill to medium-high heat or prepare your broiler. Grill or broil the steak for about 4 to 5 minutes per side (depending on your desired doneness). Transfer to a cutting board and let rest for 10 minutes before slicing against the grain into thin strips.
3. Toast the sub rolls in the oven or on the grill if desired. Place some of the steak strips onto each roll along with some red onion slices and lettuce leaves (if using). Drizzle with extra chimichurri sauce, if desired, and serve immediately while still hot. Enjoy!
